I have a tendency to make too much meat, and for reasons I will never understand women have a problem eating BBQ more than once a day for multiple days in a row... Here is one solution to that problem.
I took some leftover brisket, diced it up and put it in a pot with a medium size can of corn, some diced onion, and some BBQ sauce.  It came out looking like this:

Then I took some mashed potatoes and covered them in a baking dish (I was feeling lazy and bought the premade kind)

Everything was hot when I put it in the dish so it was technically ready to eat but I baked it for ~20 min to dry out the potatoes.  When its done it looks something like this:

If you like Shepperd's Pie and like BBQ I think you will like this.  It can be a nice change of pace when you make a butt or a brisket and want to mix it up a little with your leftovers.  Enjoy!
