Winter Springs, FL --- Light It Up

Keggers I did this one on the fly - I was cooking a house full for dinner and did not take the time to do pics of the rolls being made (wish I did they are great)

Here is the recipe - I just shaped in burger roll in place of hogie

I course ground 5 lb of skirt steak at 80/20 fat level (used a scale) blended in a little Worcestershire sauce

Grilled at 600 open lid direct to 120 internal

Caramelized red onions, shaved black summer truffles, boursin black pepper cheese and made a homemade chive aioli

I will tell you the skirt steak burger was amazing and will be done again when time allows

Tell ya what Skins that is one fine looking burger. Just for skins and grins what would you say that burger would go for on today's market?
