This is the cook I did for the Full Plated Seafood Throwdown.

The plate consisted of grilled Scallops with a butter baste, garlic butter basted Shrimp with a garlic butter dip, lightly salted Salmon, Crabcakes with a chipotle sauce, and a Tuna Tatake (seared) with some dikon (radish) and wasabi garnish on top and some red pickled ginger to the left, sliced ginger to the front and some sliced pickled (orange) Gobo root on the right, with a Ponsu dipping sauce, a side of Basmati wild rice, and shredded Red Cabbage.  The garnish includes a little Red Radish that was partly sliced thru and then soaked in ice water to "bloom" it, Kale under the Salmon, a leaf of Romain under the Scallops, a leaf of Shiso (minty Japanese leaf) under the tuna, and a leaf of Red Cabbage under the Shrimp .
   

The crabcakes were a recipe right off the can, nothing special, egg, breadcrumbs etc.  I used Panko instead of the breadcrumbs on this batch.  A little crispier.  On half the cakes they were bare, the other half got a Panko coat after some egg dip.  The cakes in my TD plate pic are without Panko on the outside.


The shrimp got some garlic butter baste while grilling


The salmon was just straight up.


Scallops a little butter baste during the grilling.


While I did it all individually, I was able to keep the various seafoods hot on the side of the fire.



And there was plenty for my wife as well.  Probably coulda had another person fed as well.

This took me the better part of noon to 6:00 pm to do, starting with making a list and going to a few stores. The planning and prep took the longest.  I prepped all the garnish first, then started planning the layout of the plate. Then I decided on the cooking order.  Insanity!  I just got my pics to Beav a not more'n quarter to 6:00 pm.   I been watchin way too much Food Channel. Gotta get a life.

One day I hope to be posting cooks like that!  The garnish and plating were top-notch as well as the food.

First class cook there RCP. When I opened the thread on the throwdon and saw that cook I knew we were in for a tough one. Way to go.
