On Sunday, we spent the day at my mom's and I grilled all kinds of meat.  Sadly, not on the keg.  So, when Monday came around and I asked my wife what she wanted she told me she was meated out!   Sad  But I wasn't going to let a fine Memorial Day pass me by without firing up the Keg.  What follows is my alternative solution...Portabella Burgers marinated in balsamic vinegar and beer.

First, I had to throw my marinade together.  All I knew when I started was that I really wanted beer...gave me an excuse to drink it too...  Wink  Here is what I came up with:

1/4 cup balsamic vinegar
1/4 cup beer
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt
Pepper

This will make enough to do 2 to 4 bellas depending on how big they are.  Here is a pic of them in the marinade.


While they were soaking up the suds, I roasted some sweet red bell peppers.  They are easy to make on the Keg.  Just roast them till the skins are black, throw them in an air tight container for about 10 min, then peel the skin.

Next it was time to throw the bellas on the grill.  I grilled them just like you would a thick burger with a little hickory smoke.


During the last minute of the cook, I placed a slice of provolone cheese on each.  Here is what they looked like when they came off the grill.


Next I cranked up the temp of the Keg a little more and threw some shrimp on...I couldn't go completely meatless Wink


The burgers were simple.  Portabellas, provolone cheese, and roasted red pepper on bun.


And the meal finished off with some chips at my wife's request.


The meal turned out great!  My mom stopped by just as they were coming off the grill and had one.  She was pleasantly surprised that they were just mushrooms and said she never thought she would ever eat mushrooms that way as she helped herself to more.  My wife ended up eating the extra one I made for my lunch today!  Shocked

Just an FYI when I stuff these I remove the gills with a spoon and it tones down the earthiness quite a bit - results in rich mushroom flavor

I really like p'bella burgers.  Made them for the veggie throwdown and suprisingly, getting requests for repeats.  Shrimp is a great addition.  you could even toss those right on the burger.
