Author Topic: Grill-roasted turkey with green chili sauce  (Read 3002 times)

Today I did a whole 14 lb. turkey on the grill.  I roasted it indirectly on a v-rack (2.5 hrs at 350*) with some Jack Daniels oak barrel chunks thrown in for good measure.  The bird had been rubbed with BBQ rub (be sure to get under the skin on the breast), salt, pepper and olive oil. 

I cut the breast off and sliced it, topping it with diced red onions and a roasted green chili and cilantro sauce. 

I didn't get a shot of the whole bird, but it was a beautiful mahogany when it came off.

It was awesome.  I know what I'm doing for Thanksgiving this year!

Green Chili Cilantro Sauce

5 cloves of garlic, roasted
2 poblano peppers, roasted, seeded and peeled
2 serrano peppers, roasted, seeded and peeled
2 anaheim peppers, roasted, seeded and peeled
1 handful of fresh cilantro
2 tablespoons or so olive oil
Juice of 1/4 - 1/2 lime (to taste)
1/2 teaspoon cumin
salt and pepper (be generous, to taste)

Pulse all ingredients in a food processor until blended and chunky.  This made a hot chili sauce.  For a milder sauce, cut down on the serrano peppers.
