Here it is in all of its glory...  I have to give partial credit for the dough to Killitandgrillit.  He gave me this recipe awhile back for pizza and I thought it would be perfect for the throw-down.




Dough

1 cup lukewarm water (glass dish)
2.5 teaspoons (or one packet) of yeast
2 teaspoons of sugar
2 cups of flour
1 teaspoon Italian seasoning
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon salt

Add sugar to lukewarm water. Still until dissolved. Add yeast, stir. Let sit for at least 10 minutes- after which it should have foam on it. Add to remaining ingredients, mix until combined. Put dough onto floured board, knead for at least 5 minutes, adding flour until the dough is firm- it should spring back after a light pinch and take a fair amount of effort to knead.

Let dough rise until doubled, punch down and roll out until it's about 1/4" thick.  Brush with EVOO and cut into 1" x 1" pieces.




Toppings:

12 thick cut peppered bacon strips, cooked until slightly firm, diced
2 or 3 Jalapenos, sliced thin
1 cup shredded co-jack cheese

I like to cook my bacon in a pan at 400 or so:



Directions:

Place dough slices in large bowl with the toppings; toss to coat.  Arrange pieces on a piece of parchment paper layering if needed.  Cover and let rise for a half hour or until doubled in a warm place.
Heat Keg and pizza stone to 500 or so and bake for 10 to 15 minutes or until golden brown.  Enjoy!
