Hey guys,

   Seems like forever since I've posted anything on here so I thought I would go all out for the Super Bowl.  Both kegs were fired up for the occasion.  Grin  Had a 12.5lb brisket smoked with oak, made Skins Bacon Mac with apple and hickory wood, and grilled potato salad with apple and hickory.  Potato salad uses diced up red potaotes and onions tossed in a few spices and BACON grease, and then finished with a mayonnaise, dijon mustard and worcestershire sauce and crumbled bacon pieces.  Shocked  Man am I still stuffed!

Brisket rubbed with mustard and spices

To be honest, I wasn't sure how to do a collage and didn't know if my entry to be up to par to compete with you guys.  I had fun and ate some good grub so I'm still a winner.....at least that's what I tell myself.  Grin

I third.
Tell me about the potato salad.

I actually found this recipe around a year ago in a Southern Living Magazine, and then for Christmas my wife got me the Southern Living BBQ Cookbook and it's in there too.

Recipe is:

Ingredients
8 bacon slices
4  medium-size red potatoes, cut into 3/4-inch cubes (about 5 cups cubed)
1  large white onion, cut into 1/2-inch-thick strips
Potato Salad Dry Rub
Potato Salad Dressing

Potato Salad Dry Rub Ingredients:
2  teaspoons  salt
1 1/4  teaspoons  pepper
1  teaspoon  paprika
1  teaspoon  garlic powder
1/4  teaspoon  dried thyme
1/4  teaspoon  dried crushed rosemary
1/8  teaspoon  celery seeds

Potato Salad Dressing Ingredients
5 1/2  tablespoons  mayonnaise
2  tablespoons  Dijon mustard
2  teaspoons  Worcestershire sauce

Preparation
1. Preheat keg to 350 to 400. Cook bacon, in batches, in a large skillet over medium-high heat 8 to 10 minutes or until crisp; remove bacon, and drain on paper towels, reserving drippings in skillet. Crumble bacon.

2. Add potatoes, onion, and Potato Salad Dry Rub to hot drippings in skillet, tossing to coat. Remove potato mixture with a slotted spoon.

3. Grill potato mixture at 350 to 400  heat in a grill wok or metal basket 30 minutes or until tender, stirring every 5 minutes. Transfer mixture to a large bowl. Add Potato Salad Dressing, and toss to coat. Stir in bacon. Garnish, if desired. Serve warm.

Serves 4-5...even less if you're real hungry  Grin

In my experience with this, it takes longer than 30 minutes for the potatoes to get tender.
