This came out good enough to be the main course of a holiday meal!!!

The pork loin was 4.5 lbs.  
Cooked diffused on the CI grate in the upper position at 300* for just over 2 hours.  
Used TrueCue Lump and a baseball sized piece of apple wood.
Prep time is about 30 min.  (You’ll need a sharp knife)

Here is everything you'll need!
Cut the pork loin and flattened it out till it mostly covered an 11”x18” cutting board.  


Brushed on a layer of raspberry chipotle bbq sauce.


A layer of Uncle Ben’s rice


A layer of StoveTop stuffing (1 box, precooked), cranberries and raisins


Rolled it up and tied with string. Coated it with EVOO a light seasoning rub (Melting Pot’s Garlic&Wine).  


Almost done


 At 150* IT brushed on some raspberry chipotle bbq sauce for a glaze.  


We took it off 15 minutes later at 160* IT


let it rest for 15 minutes and this is it!  It tastes even better than it looks!!!






This is a hard one not to like,

LOL,  Embarrassed I bought a bag of'm b/c we love'm!  I think I'm out now, but have a few nice russets, so regular baked potatoes soon Roll Eyes

I have a bad habit of buying stuff that looks good and then creating meals from what I've got it the pantry..  I just buy a bunch of stuff and then try to figure out what I can make from it Undecided  This cook was one of those.  The ingredients can change each time depending on what's in the cupboard Grin
