These are one of the 1st Mates favorites!

They reheat well also.  She takes them to work for lunches often, so I make a big batch.

This is the basic recipe.  You could add Jalapenos or whatever you like.  They hold together real well, but you could also add an egg or two.

Ground turkey – 5 lbs
Black pepper – to taste
Kosher/Sea salt – to taste
Blue cheese crumbles – 4 oz container
Italian bread crumbs – 3/4 cup
Worcestershire sauce – 3 Tbs
Garlic – 3 cloves, minced
Sweet onion – 1, chopped

- Cook onion and garlic in a small skillet until onion is tender and slightly caramelized. Remove from heat and let cool enough to handle.

- In a large bowl mix all ingredients by hand.

- Makes about 20 burgers.  Put patties in the frig for a while if time permits (I didn’t and it was fine)

- Cook on Keg diffused at 250* for about 45 minutes until IT is 160*  No flippin, no fussin, Just drink a few cold ones and come back in a while and the'll be done!  Sooo easy... Wink

And the pics..

Ingredients

chopped like this

Add evoo and brown medium heat aprox 10 min

Till it looks like this

Light in one spot for low-n-slow

Apple wood- not to much!

Add diffuser

Add grates and stabilize at 250*

Mix by hand

Makes 20 patties

On at 250*

Done 160* IT

And that’s it!
