Author Topic: Polynesian Pineapple Shish Kebabs (or Kabobs)  (Read 36392 times)

Made these tasty kebabs today; they are a family favorite.



Start with a teriyaki style marinade:
¼ cup soy sauce
3 tbsp brown sugar
3 tbsp vinegar
½ tsp garlic powder
½ tsp seasoned salt
¼ tsp seasoned pepper
1/3 cup Sprite

And ~2 lbs sirloin cut into 1" cubes, then marinade overnight.

Here they are laid out on the kebab assembly line.



Next, you need the remaining veggies:
2 bell peppers
2 large onions
Cut them into squares, then spray with Misto sprayer and sprinkle with garlic salt.





Now peels and cut the fresh pineapple into 1" chunks.



Now start the keg for a direct 700º cook.

While keg is rising to temp, assemble kebabs on pre-soaked skewers.



Once keg is up to temp, load it up.



Flip them every couple of minutes till done.



Serve over basmati rice with soy sauce.



Delicious if I do say so myself.

Looks great. How do you get the CI grill flush with the top of the keg? Do you lift the fire up to get heat closer to the kebabs?

Looks great. How do you get the CI grill flush with the top of the keg? Do you lift the fire up to get heat closer to the kebabs?

I thought that I was the only one asking that same question.  The answer that I finally got was that you need the Broil King Diffuser Kit to raise the grate to the top.  With all the experienced users here on the forum - only two replied to my post - but I did get an answer.  Maybe I didn't ask the right question.
