Here is shot of the graph from my Heatermeter controller.  I love this thing



Pic of brisket...just wrapped it to have it ready for Steelers game at 4pm.

Yup, best thing. I have mine holding a perfect 225 +/- 1deg doing beef short ribs right now.

a pic sliced.  Turned out good.  I never can get the same smoke ring though that my offset gives.  Going to make chili with the leftovers

looks good from here Dietz, hard to get a good smoke ring in the keg, I personally have never tasted a smoke ring but I've tasted many a fine kegged briskets!   Wink

Looks good to me! Nice color and I bet it was good eats. I've been wanting to do a brisket for sometime now. I've got at least 2 or 3 in the freezer waiting for me to do something with. I am supposed to make a video showing my "How To" method for another forum but I've been so darn busy as of late I haven't had time to do much of anything outdoor cooking wise. Maybe for a New Year's Eve meal??

That heatermeater looks cool. Reminds me of my Tappecue. To be honest though, I haven't used the Tappecue in over a year. I tend to hang onto my gadgets though, maybe I'll get it back into the rotation soon.
