I haven't contributed much to this section so here is a recipe that you may like Smiley

Jason's Red Potato Salad

6 cups skin on red potatoes
3/4 cup Hellman's Mayo
1/2 cup sweet pickle relish
1/4 cup red onion chopped fine
1 teaspoon kosher salt for boiling and 1 teaspoon for salad
1/2 teaspoon black pepper
1  teaspoon celery seed
1 teaspoon white sugar
1 teaspoon parsley flakes
1/2 teaspoon paprika

Chop red potatoes into bite sized cubes and place in enough cold water to cover. Put 1 teaspoon of salt into water to help flavor the potatoes. Boil potatoes. While the potatoes are boiling combine the mayo, relish, onion, pepper, celery seed, sugar, remaining salt & parsley flakes into bowl. Keep a check on potatoes, you want to cook them until tender but not mushy, about 12-15 minutes. When done, drain completely and let cool in pot for about 10 minutes. Add potatoes to mixing bowl and mix thoroughly to coat with a rubber spatula.  Lightly dust with paprika and put into fridge for several hours to chill. This can be made in advance as it will taste better the next day as the flavors marry.
