I had a few people over today and one of my friends had always wanted to try moinks, so I finally remembered to make her some.

I figured I'd show y'all that I still use my Kegs. I actually had'em both fired up yesterday, lol. I did have the pellet grill and electric rolling too but y'all have seen enough of that already Wink

Bel, yep you got it! I use 3 pounds of 80/20 chuck, 2 eggs and a little bit of bread crumbs to hold it all together. A little garlic powder, onion powder, salt and pepper. Make them into golf ball/ping pong ball sized meat balls. Wrap with half piece of bacon and then I sprinkle Weber's Coffee Rub on them. I cooked diffused with a chunk of peach wood then brush them with bbq sauce. Once it sets, I flip'em and brush with more sauce. I use my chipotle beer bbq sauce on them and it's fan-freakin-tastic!

Which ever you decide. I don't weigh them, I just grab the meat (don't say it) and make a ball. They vary in size.

Moinks are great.  I add some pork and veal into the beef mix too.  Always a hit.  Those looks awesome too!

As I was planning to make these for a party, I was searching for the recipe.   Call it a vision if you want, but has anyone put cubed cheese in the middle?
