Does the divide & conquer lower the cooking level beyond the standard configuration?

Sorry for the really slow response...just saw your question.  No, it does not change the levels much...you can cook 3-4" below the rim, or at rim level....

You'd be much better off using aluminum pans lined with foil (for easy cleanup so you can reuse it). For large pieces of meat use an oval roasting pan like for turkeys.

I just wrap foil over the up-facing surface of the stone. I guess you could form a lip if you wanted to catch drippings, but I don't roll that way :-!
