. . . Hickory-smoked chicken, with white sauce . . . Along with Cuban beans/rice, and herb/romaine/cucumber salad on the side.

Apparently it originated, way back, at Big Bob Gibson's BBQ in Decatur, Alabama ... there are a few different ways to make it. I mix mayonnaise with cider vinegar, horseradish, a little sugar, salt, pepper, and cayenne. Once the chicken is done you "paint" it with the sauce (or dip the halves in entirely, if you have enough sauce), and then let it rest under foil for about 10 minutes. After that you paint a little more on, and then have it over to the side for dipping also.  SO deliciously good. I personally can't get enough.
