Yeah, I finally got it posted. Grin

Cajunate's Homemade Chili

6 lbs. ground beef  (This is what I used 2.5 of 80/20; 3.5 of 85/15)

5 ½-6 Cups diced onions

2 Cups diced bell peppers

3 ½ Tbsp. chili powder

1 Tbsp. black pepper

1 Tbsp. salt

2 Jalapeno peppers, sliced

2 cans red kidney beans

1 can Blue Runner cream style red beans

1 can black beans

4 toes garlic(finely chopped)

2 large cans Tomatoes

1 can tomato paste

1 can tomato sauce

Start off by browning the ground meat in a Dutch oven or large heavy pot. Be careful using cast iron as the acid in the tomatoes can cause an iron taste to leach into the chili. Only use a really well seasoned cast iron pot if you have to. When browned remove meat from the pot and set aside.

Next saute' the onions and bell peppers add the garlic when almost done with saute'.

Add the meat back into the pot and mix well with the onions and bell peppers. Add the tomatoes, sauce and paste and stir to mix through.

Add the chili powder, black pepper, salt and jalapeno pepper slices. Let simmer for about an hour over med/ low to low heat but stir occaisionally to make sure it's not sticking to the bottom of the pot.

Add the beans and let simmer to heat beans completely through(depending on the brand and quality of the canned beans you may need to let the chili cook a little longer so they aren't hard). Taste and add whatever seasoning you think it may need.

They are closed minded idiots (did I just say that?? YEP!) and they can't see the usefulness of other types of cookers.
