That's a really great idea with the ability to modify. You could go Cajun with andouille or seafood etc.

Looks like I'll be giving this a try this weekend.

There are lots of good simple recipes for milk gravy. This is one I follow loosely for amounts.

milk gravy

1/4 cup pan drippings (bacon drippings or sausage drippings)
1/4 cup all-purpose flour
2 cups milk, room temperature
Salt and pepper to taste
crumpled sausage - opt.

Preparation:

In a medium frying pan (that you fried the bacon or sausage in) over medium-high heat, combine bacon or sausage drippings and flour, stirring constantly until smooth and bubbly about 1 minute. Add the warm milk slowly and bring to a boil.
Reduce the heat to a low simmer and stir, until smooth and thickened, about 5 minutes, adding milk as necessary to control the thickness.
Season with salt and pepper. Add in crumpled sausage and serve.

I know this is an old post but I just saw this.  We do a breakfast casserole every year for Christmas.  This have given me some great new ideas for changing it up.

What a wonderful idea! Bet that was fantastic!

The top of the pie looks SO nice .. for 'plating' why cover it up with gravy?? ... I'd gravy on the side or under and around, maybe put a few veggies on around or on top of ... slivered red onion, green pepper, chopped cilantro or parsley, maybe some tomatoes, apples or citrus. Just a thought....But I can also respect going all protein and fat  Grin

That is the best lookin pie i have ever laid eyes on,breakfast ,dinner or supper.The eggs don't work for me but do for the rest of the family,oh well i would just have to make 2.  Grin

Tried the pie this weekend and all I can say is YUMMY!!!!! the entire family devoured it. Great recipe and a must try I will definitely be making it again.
