Here's my throw down entry.

First off let me give full credit to Chris at http://www.nibblemethis.com/ for the recipe and step by step:

http://www.nibblemethis.com/2010/08/salsa-verde-beef-enchiladas.html

I don't know him but am a fan of his site. A lot of good stuff there

I used his changes and in addition I added a teaspoon and a half of chili powder and a whole bottle of beer in the beginning.

Ready for the braise

The flank steak is done. I pulled it out and reduced the liquid to about two cups

I did the meat the day before so after I shredded it went in the fridge as did the sauce for the flavor to get good.

I picked up two tips from the site. first is to warm the tortilla in cream (I used 1/2 and 1/2) to make it pliable

second tip is to put the filling on the side of the tortilla instead of the middle for easy rolling

I took the reduced sauce and added a cup of water back so that it covered the bottom of the pan

ready to go on the keg

done

and ready

Thanks for the votes guys

They are closed minded idiots (did I just say that?? YEP!) and they can't see the usefulness of other types of cookers.
