 haven't done a skirt steak before and I thought I'd give it a shot.  Marinated using this recipe: http://allrecipes.com/recipe/fajita-marinade-i/, but I added 1 tsp each of fresh ground cumin and coriander.

I put the veg into a 600 deg CI skillet, onion first for a couple minutes, and followed with the peppers, on for about three minutes, then the leftover marinade goes in for 2-3 min (until it rendered down a bit) ...



Put that in a 200 deg preheated and then turned it off, just to keep it warm while the keg climbed up to ...



And put the skirt steak on for a few minutes ...



Let it rest, cut it up and put it on a wheat tortilla ...



Wheat tortilla, sauteed pepper, sauteed onions, chipotle paste, cilantro jalapeno pesto, smoked cheddar, sour cream, and marinaded skirt steak.

It was fantastic, it'll be hard to do fajitas without using skirt steak.  Highly recommended.  Although I'm thinking skirt steak only needs about 2-3 min at that temp to be done, and I went about 1-2 min too long on this cook.
