Title: Bubba Bomb Recipe.
Post by: ranbeaux on June 07, 2010, 01:10:16 PM
Guys, here is how I do a BUBBA BOMB.. ;D

First I get a nice pork butt and run it thru my meat grinder.

I make a 3/4 ta 1" thick square out of it and add whatever ya want. here I chose malibar spinach out of my garden, sliced bell pepper, mushrooms.  stack them on there with a little space between each row..

Next season the inside with some nice pork seasonins, and roll it up.. You don't want to cut corners on your bacon at this point... I use Wright brand bacon cuz it 1/4 inch thick and will be on the pit for a bit.

Here is where your weaving skill come in handy, I like to use a basket weave, looks cool and covers well.

Now its time for the pork rub.. I like John Henry's,  cover it good!!!!!

Get out your favorite bbq sauce and slather it up good.. I like Sweet Baby Rays every now and then..

Plop that baby on the Bubba at 275 till the internal is about 175 ta 180...

This is what she should look like when done..

That's the best bacon!  Well, at least that I've found readily at local stores.

Did you say meat grinder?:

Dutch: So you cooked up a story and dropped the six of us in a meat grinder...What happened to you, Dillon? You used to be someone I could trust.
Dillon: I woke up. Why don't you? You're an asset. An expendable asset. And I used you to get the job done, got it?
Dutch: My men are not expendable. And I don't do this kind of work.

Harbour Freight has a real good medium use grinder for right around $100.00. Just right for batches less than 30 lbs. So does Northern Tools.

Thanks I will look at them. I have been needing one anyway to grind up some deer and elk meat, the pictures in this thread have given me another reason to want one. 8)

If your wife has a KitchenAid mixer, you can get a meat grinder/sausage stuffer attachment that works pretty good, although it's not meant for fast production grinding. Another possible source for hand-crank grinders is the local flea market if you have one.
